Chigonoiwa Shuzo is located in the area called ‘Toki’ this area is known as the thick clayey land foundation.
This foundation plays a role as a filter to make the water flowing through very softy.
They use this water especially from Mikuni mountain’s undercurrent water that has suitable mineral balance for sake production.
The hardness ration of this water is 7 then below 10, it is absolutely rare soft water that makes the soft tasty taste of Sake.
“Chigonoiwa” stands for the famous stone lying around the location, that has a well-spoken story “the stone with 1000 years of people’s wishes to have a healthy babe.” Nakajima-san founded this Kuramoto named after this stone in 1909 with the wish to be blessed by the story.
